Power lunch. Garnish with microgreens, or as shown mix with other vegetables. Kick nutrition up a notch!

Ingredients:

  • One-quarter pound (200 mg) peeled & deveined shrimp, any size.
  • One-quarter pound (200 mg) pea shoots.
  • One-half cup ((200 ml) brown or white rice as desired.
  • Other microgreens to taste, optional.
  • Olive oil 2 tbsp.
  • Salt and pepper to taste.

Procedure:

  • Prepare rice as desired. Fluffy style recommended; sticky optional.
  • Sauté shrimp two minutes over pre-warmed medium heat.
  • Add greens and sauté additional one minute.
  • Serve sautéed ingredients over rice.

Accompaniments:

  • Chopped romaine salad with nuts and pears.
  • Dry chardonnay or berry/pomegranate juice.
