Create this hearty breakfast of English muffin, scrambled eggs and mixed greens in under ten minutes!

Serves any number. This one takes concentration to serve warm.

  • English muffin, sliced, one per serving.
  • One to three eggs per serving, free range recommended.
  • One ounce (25mg) mixed microgreens per serving.
  • Butter (optional).
  • Jam or jelly.

Procedure:

  1. Assemble all ingredients.
  2. Start toasting muffin.
  3. Quickly scramble and sauté egg(s); salt & pepper to taste.
  4. Remove eggs from heat just as they reach desired degree of firmness.
  5. Muffin should be done; butter and spread jam, or add dollop of jam to plate.
  6. Garnish eggs with greens

Accompaniments:

  • Plain or flavored yogurt.
  • Grape tomatoes.
  • Coffee, fruit juice or cocoa.
